The Chop Shop Butchery, butchers, PJ Jackson & Matt Helms will talk, demonstrate and teach all you need to know about the anatomy of a pig and whole animal butchery techniques. This class will focus on the many different butchering techniques that can be used; boning out a leg, cutting the muscles along the seams, tying roasts, slicing the pork for steaks, and how to use the trim to make sausage. Each participant will get hands on experience and take home plenty of meat.

Come for an evening of learning, eating and libations with fellow friends and pig lovers.

approximately 5-6 lbs. of pork to take home per participant
